- If your little ones aren’t fans of chunky ingredients, finely chop the celery and green onions or leave them out altogether.
- Healthy eating? Substitute plain Greek yogurt for some of the mayonnaise to make the salad a bit healthier.
- If you are looking for a more flavorful chicken salad, consider adding a touch of your favorite seasoning or sprinkle of herbs.
- Got extra chicken salad? Serve it on crackers, bread, or a bed of lettuce. You can even stuff it into celery sticks for a healthy snack!
- Use mini croissants for a perfect treat at a baby shower.
- This is a great recipe to make with leftover chicken breasts or even leftover turkey!
Variations:
- Try adding a little salt, a pinch of garlic powder, a dash of hot sauce, or a squeeze of Dijon mustard for an extra burst of flavor.
- Substitute dried cranberries for the grapes.
- Use a combination of mayo and sour cream instead of straight mayonnaise. Or use Miracle Whip instead of mayo.
- Add slices of tomato slices to your savory croissants.
FAQs:
- Can I use canned chicken? Absolutely! Just make sure to drain it well and shred it before adding it to the salad.
- How long does chicken salad last in the refrigerator? If stored properly in an airtight container, chicken salad can last for 3-4 days in the refrigerator.
- Can I freeze chicken salad? While freezing chicken salad isn’t recommended, you can freeze the cooked chicken and the dressing separately and then combine them when you’re ready to serve.

Making your Chicken Salad Croissant
Ingredients for our Homemade Chicken Salad:
- Creamy Dressing Ingredients:
- 1 cup mayonnaise (use the good stuff!)
- 6 oz cream cheese, softened
- 1/2 cup whipping cream (or milk if you’re in a pinch)
- Chicken Salad:
- 4 cups cooked, shredded chicken (rotisserie chicken is your best friend, or use leftover roast chicken)
- 4 stalks celery, finely chopped
- 2 stems green onions, thinly sliced
- 2 teaspoons pickle relish (or chopped dill pickles)
- 4 teaspoons lemon juice (freshly squeezed is best)
- 2 cups sliced red grapes
- Salt and black pepper to taste
- Croissants:
- 8-12 buttery store-bought flaky croissants
- Romaine lettuce leaves (optional, but they keep the chicken mixture from making the buttery croissant soggy)
Directions for chicken salad croissant:
1. Toss the mayonnaise, cream cheese, and whipping cream into your blender. Give it a whirl until it’s smooth and creamy.
2. Chop the celery, and green onions.
3. Grab a large batter bowl and combine the dressing, celery, green onions, relish, and lemon juice.
4. Pour the creamy dressing over the shredded chicken and add the halved red grapes. Give it a good stir until the chicken is coated in deliciousness. Now, taste and season with salt and pepper. I like mine with a little extra kick, but you do you!
5. Cover the bowl with plastic wrap and pop it in the fridge for at least 30 minutes. This gives the flavors time to mingle and the salad to firm up a bit.
When you’re ready to eat, slice those croissants in half lengthwise. If you want to avoid soggy bottoms (and let’s be honest, who doesn’t?), add a layer of romaine lettuce to each bottom half. Now, pile on that creamy chicken salad.
