What this IS, though, is chocolate ice cream that tastes like a richer, more velvety Wendy’s Frosty. No grain, no runniness. Just amazing taste that you can have stocked in your freezer for when the craving strikes.

In 5 minutes, you can whip this up and then store a pint (or 5 or 10 – I won’t judge) in your freezer. No more running to Wendy’s at 11:45 pm in your bathrobe! Not that I have ever done that or anything.

  • 1 1/2 cups half and half (use whole milk for an even richer frosty)
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1 1/2 tablespoons monkfruit sweetener (or sugar to taste)
  • 3 tablespoons chocolate pudding mix (instant)
  • 2 1/2 tablespoons cottage cheese (the secret ingredient for creaminess!)
  • 1 tablespoon cream cheese, softened

Directions:

1. In a small dish, heat four tablespoons of the whole milk in the microwave for 10 seconds. Whisk in the cocoa powder until smooth. This blooming process intensifies the chocolate flavor and creates a smoother texture. Let cool slightly (about 5-10 seconds).

2. In your pint jar, combine the remaining half and half, monkfruit, pudding mix, cottage cheese, and cream cheese. Add the cooled cocoa mixture. Blend until completely smooth and creamy.

​3. Don’t overfill – make sure to stay below the max fill line to avoid spills. Secure the pint lid and freeze for at least 12-24 hours. For the best results, aim for a level top when freezing.

4. After 24 hours, take the pint out of the freezer and let it sit at room temperature for a few minutes to soften slightly. Place the pint in the outer bowl of the Ninja Creami, lock on the outer bowl lid, and process it on the “Ice Cream” setting. If it seems a bit crumbly after the first spin, use the re-spin function for a creamier texture. Sometimes, a second spin is all you need for the perfect consistency. If it is still crumbly, add a splash of half and half or whole milk and hit that re-spin button.
