Making your Chicken Salad Croissant

Ingredients for our Homemade Chicken Salad:

  • Creamy Dressing Ingredients:
    • 1 cup mayonnaise (use the good stuff!)
    • 6 oz cream cheese, softened
    • 1/2 cup whipping cream (or milk if you’re in a pinch)
  • Chicken Salad:
    • 4 cups cooked, shredded chicken (rotisserie chicken is your best friend, or use leftover roast chicken)
    • 4 stalks celery, finely chopped
    • 2 stems green onions, thinly sliced
    • 2 teaspoons pickle relish (or chopped dill pickles)
    • 4 teaspoons lemon juice (freshly squeezed is best)
    • 2 cups sliced red grapes
    • Salt and black pepper to taste
  • Croissants:
    • 8-12 buttery store-bought flaky croissants 
    • Romaine lettuce leaves (optional, but they keep the chicken mixture from making the buttery croissant soggy)

Directions for chicken salad croissant:

1. Toss the mayonnaise, cream cheese, and whipping cream into your blender. Give it a whirl until it’s smooth and creamy.

2. Chop the celery, and green onions.

3. Grab a large batter bowl and combine the dressing, celery, green onions, relish, and lemon juice.

4. Pour the creamy dressing over the shredded chicken and add the halved red grapes. Give it a good stir until the chicken is coated in deliciousness. Now, taste and season with salt and pepper. I like mine with a little extra kick, but you do you!

5. Cover the bowl with plastic wrap and pop it in the fridge for at least 30 minutes. This gives the flavors time to mingle and the salad to firm up a bit.
