Brie Puff Pastry Bites

These delicious brie puff pastry bites make the best appetizers! Flaky puff pastry, creamy brie cheese, tangy fig jam, and crunchy walnuts come together to create our favorite easy appetizer recipe!

Don’t they look so cute? And even a little bit fancy? A lot of pretty foods can be so stressful, time-consuming, and even painful to prepare. Not these! This is such an easy recipe.

How to make Brie Bites

These small bites are ideal because they are individually portioned and self-contained, so they are easy to serve and enjoy! If you’re ready for the perfect appetizer, let’s get cooking!

Equipment you will need for Brie Bites

  • Rolling pin – I didn’t have mine on hand, but the one I’ve linked is adjustable and is invaluable when rolling out different thicknesses of dough
  • Measuring spoons – These magnetic measuring spoons have a round spoon side and a narrower spoon side. That means that they will fit inside most spice jars. AND you have two of every size, so less washing up!
  • Cutting board
  • Pizza cutter or large, sharp knife – I pretty much love everything OXO, so pick up one of these and they will last forever, practically
  • 2 muffin tins – Wilton is perfect for all of your baking, and I use all of their pans. I did use this antique one for the pictures because it’s so pretty, but the real baking happened in a Wilton tin!

Ingredients for Brie Bites

  • 2 puff pastry sheets
  • 1 wheel of brie cheese
  • 4-8 ounces of fig jam
  • 1/4 cup of chopped walnuts
  • *Nonstick cooking spray?
  •  Fresh thyme or fresh rosemary (for garnish)

Directions for these easy Brie Bites

1. Thaw your puff pastry to room temperature. This takes 4-8 hours in the fridge, but there’s a quicker method if you’re in a hurry. Wrap the pastry in a paper towel on a microwave-safe plate and zap for 15 seconds; unfold the pastry sheet, and repeat for another 15 seconds. Voila! Thawed puff pastry.

Now use the rolling pin and cutting board to roll the sheet of puff pastry into a 14-inch rectangle. (If you are using fresh, homemade puff pastry, I bow to you, and it’s best to chill the dough overnight before rolling and cutting.)

2. Preheat the oven to 350 degrees. Lightly spray the muffin tins with nonstick cooking spray. Use the pizza cutter and cutting board to slice the pastry into squares. Then lay one piece of dough in each muffin cup.

3. Using the large knife and cutting board, chop the brie into equal pieces and place a piece of brie in each of the pastry cups. (The slice/cube of brie should almost cover the base of the pastry.) Top with 1 to 1 1/2 teaspoons of fig jam and sprinkle chopped walnuts over the top.

4. Slide your muffin tins into the oven and bake for 18 to 20 minutes or until the edges are golden brown. Allow your puff pastry bites a few minutes to cool on a cooling rack. Top with a sprig of rosemary.

Tips for baking Puff Pastry Brie Bites

  • Put the brie wheel in the freezer for 10-15 minutes, and it will be easier to cut.
  • If you don’t have measuring spoons handy (or they’re dirty… no judgement), you can use a regular small spoon and just eyeball the amount of jam. It doesn’t need to be precise!
  • No pizza cutter? No problem. It does make cutting the puff pastry dough easier, but you can use a knife instead.
  • I used full-size muffin tins, but you can also use a mini muffin tin. Just make sure you cut down your pastry size and filling quantities to fit!
  • You can store any leftovers in the fridge in an airtight container or covered with plastic wrap for *-* days. (I had to do a little covert operation and hide these in the fridge to test how long they’d stay good because there are never any leftovers at my house.)

Variations for different brie bite flavors

  • I’ve only ever used puff pastry dough but I’ve heard crescent roll dough works as well.
  • I love brie, but goat cheese and cream cheese work really well if you prefer. You could also try another soft cheese.
  • You can find fig jam/spread at most grocery stores, but if you can’t find it or just don’t have time, you can use strawberry, apricot, or raspberry jam, cherry compote, or tart cranberry sauce.
  • Almonds and pecans work just as well as walnuts for a bit of texture. Or you could go nut-free – especially if you’re feeding a crowd and worried about possible food allergies.
  • I think that rosemary is a gorgeous garnish for this delicious appetizer recipe, but feel free to get creative! Or just skip the garnish and dig in.

These yummy individual bites make for a delicious snack or a great addition to any appetizer table. I often make these for a special occasion or during the holiday season, but they are wonderful any time of year!
