Nothing beats the texture of fluffy pancakes with nice crispy edges. Of course, you get that with regular pancakes, but I actually prefer the fluffy-to-crisp ratio of small pancakes. Every bite delivers that soft crunch, then chewiness, and finally melt-in-your-mouth satisfaction.

Why did my little pancakes turn out hard and tough?

  • The most common reason pancakes turn out hard is overmixing the batter. Whisk until there are no more flour pockets, then set aside to rest. Other reasons your pancakes turned hard could be too much flour, or overcooking the pancake. Side note – don’t press down on the top! Although that alone shouldn’t make the pancakes hard, it will certainly make them less fluffy.

Should I leave the pancake batter to rest before cooking?

  • You should definitely let your pancake batter rest before using it. This gives the gluten time to develop, creating an airier structure inside during the cooking process.

Should I use butter or oil to grease the skillet for small pancakes?

  • There’s no definitive right or wrong answer between using butter or oil to cook pancakes – but they do yield different results! Using melted butter will add a milky, buttery flavor to the outside. But if you use oil, you’ll likely achieve more consistent browning. Make sure to choose an oil with a high smoking point, like avocado oil, coconut oil, or soybean oil. I haven’t tried using ghee, but I hear it works very well too!

Ingredients for Mini Pancake Recipe

Pancake batter – I used Krusteaz because it was such a busy day, but feel free to make the batter from scratch for homemade mini pancakes.

Our toppings:

  • Strawberries
  • Blueberries
  • Raspberries
  • Blackberries
  • Bananas

  • Melted butter
  • Pure maple syrup

Directions on how to make fluffy mini pancakes

1. Follow the instructions on the product’s label to make pancake batter on busy mornings. If you have more time, you can use super basic ingredients to make the batter from scratch! We also like mixing up homemade pancake mix and storing it for later. Whichever quick recipe you choose, make sure you mix the wet ingredients in a separate bowl before adding them to the dry ingredients.

2. Preheat your skillet or nonstick pan on medium heat. 

3. Pour your pancake batter into a squeeze bottle or piping bag, then squeeze out little circles of batter about the size of silver dollars.

4. When you see lots of little bubbles all over the top of the pancakes, flip ’em over! They should be a nice golden brown and keep their fluffy texture. Once the bottom forms a golden brown ridge around the outside and your pancakes are well set, remove them from the heat.

5. Begin layering the pancakes on top of each other – maybe 3-5 for each of the mini stacks. Put some Nutella between the layers for a super indulgent treat. Then add your favorite berries and skewer with a cute toothpick.

6. Drizzle with pure maple syrup and serve immediately.

Variations for Mini Pancakes

Dress up these tiny pancakes with all your favorite toppings:

Add some cocoa powder and a little extra sugar to the batter to make mini chocolate pancakes.

The best way to enjoy pancakes is hot off the griddle! They don’t keep too long, but these silver dollar pancakes tend to last a little longer because of the crisp-to-fluffy ratio. You can store any leftover pancakes in a ziplock bag or airtight container for a few days.
