These mini personal sized pizzas are perfect to make for a quick dinner or party appetizer, with a few simple ingredients and the perfect pizza crust. Ingredients
- 12 Rhodes Dinner Rolls (frozen rolls)
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 cup diced green bell pepper
- 1/4 cup diced onion
- 1/4 cup sliced black olives
Optional toppings:
- Cooked sausage
- Cooked bacon
- Mushrooms
- Pineapple chunks
- Jalapeño slices
- Red pepper flakes
- Canadian bacon
- Ham
- Other favorite pizza toppings
Equipment needed:
- Baking sheet
- Parchment paper
- Rolling pin
- Knife or kitchen shears
- Oven
How to Make Mini Pizzas with Rhodes Dinner Rolls
1. Preheat your oven to 375°F (190°C).
2. Line a baking sheet with parchment paper and spray the paper with non-stick cooking spray.
3. Take 12 Rhodes Dinner Rolls (frozen rolls) out of the freezer, cover them with a piece of plastic wrap, and let them sit at room temperature for 3-5 hours or until they are thawed and risen. (Hint: I spray the plastic wrap with non-stick spray so that it won’t stick to the dough balls) Actual time for complete thawing depends on the temperature of your kitchen.
If you don’t have 3-5 hours, there is a quicker thawing method. For the quick thaw method, place the frozen rolls on a microwave safe plate and microwave on high for 30 seconds. Then flip the Rhodes rolls over and microwave for another 30 seconds.
4. After thawing and on a lightly floured surface, use a rolling pin to flatten each of the Rhodes rolls into a small circle about 4 inches in diameter.
5. Place the flattened Rhodes rolls onto the prepared baking sheet.
6. Leaving a small border around the edges, spread about 1 tablespoon of pizza sauce onto each of the flattened Rhodes rolls.
7. Sprinkle shredded mozzarella cheese evenly over the pizza sauce, and then add sliced pepperoni, diced green bell pepper, diced onion, sliced black olives, or other toppings of your choosing on top of the mozzarella cheese.
8. Bake the mini dinner pizzas for 15-20 minutes, or until the cheese is completely melted and the crust is golden brown.
9. Remove the baking sheet from the oven and let the mini dinner pizzas cool for a few minutes on a wire rack before serving.
